What is your favorite memory of food?
Well, my favorite memory was sitting at the kitchen table where my mother was preparing dinner. Coming in the house after playing in the cold outside, you came in and the house smelled like fried chicken or meatloaf.

When did you know you were interested in food?
I guess I was about 10, 12 and I would wake up early on Saturday morning and I would experiment. My friends would come over and I would make lunch for them; I remember the way I spread the mayo on the bread all the way to the ends.

What did you want to be when you grew up?
I remember, (I am the youngest of 9), telling my sisters “let’s open a restaurant and call it ‘sisters’”. On Saturday nights, when my mom used to let me make dinner, I would answer the phone “Pam’s kitchen”!

What was your kitchen like growing up?
It was small, it wasn’t a big kitchen. I just remember the table and watching my mom chop bell peppers and onions and making spaghetti.

Do you bake at home?
Yes.

Who were your biggest food influences?
I guess I would have to say my mom, event thought she didn’t make a lot of sweets. For the holidays I would stay up at night to make sweet potato pie and pound cakes. I’m not much of a talker, but I would listen and ask questions a lot.

What made you decide to start a business?
It was in me from the time I was small.. I went to Bible College to go into ministry, but I decided to open a cobbler shop. I was always selling something, had an entrepreneurial spirit. It is just a dream that I’ve had since I was young.

Where is your favorite place to eat?
Oh goodness. I like Lawry’s and Ruth’s Chris. City Bakery in New York.

What is your favorite cookbook?
One that I refer to a lot is George Washington Carver’s cookbook from the Tuskegee Institute.

Is there anything that you are afraid to make?
Yeah, wedding cakes!

Where do you see your business in 10 years?
In ten years, I see my business with my products in stores, and doing great online business shipping all over the United States.

What are you favorite flavors?
Chocolate and Key Lime.

What is your favorite tool or piece of equipment?
Rolling pin.

How long have you been in the business?
I started in 1990, so 17 years.

How did you get started?
Like I said; I wanted to open a small cobbler shop. I did it for three years, took my last $800 and took a small place to sublet that had no kitchen. I used a kitchen from a restaurant upstairs and brought everything down once it was baked. I would take the money I made in the day and would by the ingredients for the next day.

Did you go to school for cooking?
No.
